pork parcels 3These porky pie parcels are just totally delicious and now with the spring sunshine shining down on us a little, they are perfect for after school picnics at the playground, or snacks for little adventures…

what you need…pork parcels1

  • ready made puff pastry
  • 500g pork sausage meat
  • 150g bacon pieces
  • 1 onion optional
  • 1 tablespoon of cooking oil
  • egg beaten to glaze
  • salt and pepper to season
  • large and small mixing bowls
  • rolling pin
  • weighing scales
  • small panpork parcels2
  • wooden spoon
  • pastry brush
  • baking tray
  • baking paper

what to do…

  1. turn the oven on to 220c
  2. line the baking trays with baking paper
  3. beat the egg and add a pinch of salt
  4. cut the bacon up into very small pieces and if using an onion,peel and chop very finely
  5. use the small pan to cook the bacon in the oil until it browns and then add the onion and cook until it softens
  6. now mix the filling together, put the sausage meat, bacon and onion into the large mixing bowl and add a pinch of salt and pepper
  7. once cool divide the mixture into 8 portions
  8. then, using half the pastry at a time, roll out the pastry to 40cm x 20cm,  trimming the edges, and divide into 4 stripes
  9. then repeat with the other half of the pastry
  10. shape the filling into 8 blocks, 8cm x 8cm and pop it into the pastry strips, dampen the edges of the pastry with water, fold over and copork parcels 5ver the filling, pressing down gently to put the edges of the pastry together
  11. brush the parcels with a beaten egg, and make small holes in the top of the parcels to allow the steam to escape when cooking
  12. pop the porky pie parcels in the oven for 30 minutes…
  13. delicious hot or cold!!!

  • sing 10 brown sausages sizzling in a pan
  • which animal does pork come from?
  • recognising which meat comes from which animals?
  • if you would rather make a vegetarian option, try using vegetarian sausage meat instead
  • what other recipes can you think of that you can make a parcel with puff pastry? Maybe you could use spinach and feta? or a puff pastry pizza?
