The first of my ‘little dreams on holiday’ blogs…whether you’re following the sun this summer or hoping that Britain can bring the sunshine to us, we all have access to lemons ? But let’s be honest, picking lemons from the lemon tree on the mountain side to make your lemon cake if far more satisfying than popping to the supermarket to purchase them, but however we get our lemons, the tantilising taste of this delicious and very easy to make cake makes either way worth it!!!


what you need…

  • 175g softened butter
  • 175g caster sugar
  • 3 eggs
  • 175g self raising flour
  • 2 lemons
  • mixing bowl
  • lemon squeezer
  • wooden spoon
  • electric whisk
  • 8inch cake tin x2
  • butter to grease
  • zester
  • 1/2 lemon
  • 200g icing sugar
  • 100g softened butter


What to do…

  1. pre heat oven to 180c
  2. grease the cake tins
  3. pop the butter and sugar into the mixing bowl and cream together
  4. beat the 3 eggs then add to mixing bowl, continue to add the flour gradually
  5. zest the two lemons and add to mixture, then squeeze the juice of one lemon and add
  6. beat together for about 2 minutes then spoon te mixture equally into the cake tins
  7. beat for 30/35 minutes and then leave to cool for 10 minute
  8. for the icing beat the sugar and the butter together and add 1tbsp of lemon juice to mixture
  9. spread the icing on the top of each cake and sandwich together
  10. we then cut the cake into nibble squares perfect for little hands for much needed summery treats

  • try using other citrus fruits, oranges or limes using exactly the same process…
  • slicing lemons and drying them in the sun to add to sauces or use as decorations
  • printing with lemons; cutting the lemon in half and lightly painting the flesh to then print onto paper
