My sister in law has just set up a wonderful little enterprise after returning from her travels, called Round the World Supper Club. She has always been passionate about cooking, exploring foods and their flavours from various parts of the world. You can see the influence of her experiences from around the world flowing through all she creates. She sweetly sent this recipe in to me to sample, as it is so beautifully exotic but yet so simple and child friendly, attractive and totally delicious. Perfect for a warm afternoon to quench the thirst of those littlies and return energy to their little beings.

what you need…watermelon jelly

  • 1 small watermelon
  • 600g strawberries hulled and chopped
  • 100ml clear apple juice
  • 75g caster sugar
  • 9 sheets of leaf gelatine
  • 1 tbsp of lime juice
  • pumpkin seeds
  • blender
  • mixing bowl
  • saucepan
  • sieve
  • small bowl

what to do…

  1. cut the watermelon in half and remove the soft flesh, keeping the skin of the two halves
  2. cut the watermelon into chunks and blend into a puree
  3. press the watermelon puree through a fine sieve into a bowl
  4. put the chopped strawberries in a pan with the apple juice and sugar and cook gently for 10 minutes until the strawberries are very soft
  5. meanwhile soak the gelatine in a bowl of cold water for 5 minutes to soften
  6. press the strawberry mixture through a sieve into a small bowl, then add the gelatine sheets into the bowl too
  7. stir until the gelatine sheets have dissolved then add the watermelon juice with the lime juice and stir
  8. pour into the watermelon halves and place in fridge for at least 6 hours, until completely set
  9. once set, press in gently along the sides some pumpkin seeds to make it look like the original watermelon!!!
