It is my reckoning and deciding this year, that all new years resolutions should almost definitely begin in February. After all the Christmas magic and the sparkle of excitement the meanders through the weeks leading up to and after, it would almost be unhealthy to stop having a little pleasure and satisfaction, when this month of all months, almost definitely needs some delicious treats to keep our little smiley faces beaming.

We decided to make this scrumptious chocolate cake…….

what you need…chocolate-cakes

for the cake:

  • 150g plain flour
  • 50g cocoa powder
  • 175g unsalted butter softened
  • 150g light muscovado sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • bowls x2
  • spoon
  • electric whisk
  • 8 inch cake tins x2
  • grease proof paper

for the icing:

  • 100g plain chocolate
  • 150g unsalted butter
  • 130g cream cheese
  • 175g icing sugar
  • chocolate star decorations
  • glass bowl x2
  • saucepan
  • wooden spoon
  • knife

what to do…

  1. preheat the oven 180c
  2. grease cake tins and line with greaseproof paper
  3. add flour, cocoa powder and baking powder into the bowl
  4. in a separate bowl cream together the butter, sugar, and vanilla essence and then add the beaten eggs, folding in the flour mixture as you go
  5. spoon the cake mixture equally into the cake tins and bake for 30 minutes (check to see if the cake is cooked through by pushing a skewer through the cake and if it comes out clean the cake is baked)
  6. leave the cake to cool for at least 20 minutes
  7. for the icing, melt the chocolate in a glass bowl set over some simmering water to melt and then set aside to cool
  8. in another bowl beat the cream cheese and butter together, then add the icing sugar, then add the cooled chocolate
  9. spread the icing on one side of the cake then place the other cake on top and spread the remaining icing on the top
  10. decorate as you please!!! we put our much loved star decorations on the top….
