Funny how you get back from work feeling a little deflated, to turn around and thank the moon and stars and all the wishes that have and haven’t come true, that children are in your life…I was head in hands, slumped over my table after lunch. Between, wondering if anyone would notice if I had a little sleep while the ‘to do list’ kept my mind firmly awake and almost more tired all at once!!! When my little 4 year old, called out to me. I popped my head out from it’s potentially cosy position, not disimilar to a meercat, that sort of startled ‘I’m needed immediately what was I thinking look’, and I felt my gaze reach my wee man, all dressed up in his little apron and oven gloves firmly on both hands with a over ripe black banana in each. That was enough to bring a huge smile to my face…and this is what we did….banana cake cupcakes1

what you need…

  • two old ripe bananas, mashedbanana cake cupcakes
  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 190g self raising flour
  • 60ml milk
  • mixing bowl
  • saucepan
  • wooden spoon
  • teaspoons
  • muffin tray
  • cupcake cases
  • icing sugar for sprinkling

what to do…banana cake cupcakes 2

  1. turn the oven onto 180c
  2. place the cupcake cases into the muffin tray
  3. mash the bananas up really well, the kiddies love this!!!
  4. melt the butter and caster sugar
  5. meanwhile, pour the flour, egg, vanilla extract, milk into a mixing bowl with the mashed bananas
  6. remove the butter and caster sugar from the heat and pour into the mixture
  7. stir well
  8. spoon the mixture into the cupcake cases
  9. pop into the oven for 25 mins or until the cake is cooked through
  10. remove and leave to cool, once cooled you can sprinkle some icing sugar over the top
  11. yummy!!! perfect for after school treats or picnic favourites…
