This is a lovely simple recipe, making an alternative to banana cake, and certainly a lovely gift to give to a friend or offer at a tea party.

What you need…

This recipe makes 2 loaves, one for a friend and one for you!!!!

  • 325g plain flour
  • 1 1/2 tsp bicarbonate of soda
  • 1 tsp of baking powder
  • 3/4 tsp salt
  • 3/4 tsp ground cinnamon
  • 3/4 tsp of ground all spice
  • 115g butter softened
  • 375g caster sugar
  • 3 eggs
  • 350g mashed avocado
  • 175g buttermilk
  • 1 lime zested

what to do…

  1. preheat oven to 180c
  2. grease two loaf tins
  3. add together flour, bicarbonate of soda, baking powder, salt, cinnamon and all spice
  4. in another bowl cream together the sugar and butter until light and fluffy
  5. beat in the eggs and then mix in the mashed avocado
  6. stir in the other ingredients with the buttermillk, and divide evenly between the tow loaf tins
  7. bake for 50mins/1hr
  8. once cooked allow to cool

into a little dream adventure…

  • wrap one of the avocado loaves with baking paper and ribbon, accompany with a hand written label
  • keep the stones of the avocados, as this can create another really lovely art activity – get a tray and place a sheet of paper in the tray, then place your avocado stone into a dish of paint, using a spoon, transfer the stone into the tray and move the tray, tipping from left to right, thus creating gorgeous paint patterns onto the paper, continue using another colour of paint
  • what else can you use the avocado for? make delicious guacamole for a yummy dip. For the mummies, avocado is a fantastic face mask, reducing the appearance of wrinkles!!! it can also be used to treat dry hair, or as a mask to create beautifully shiny hair… it also goes without saying, avocado makes the most delicious and very healthy snack, as it is one of the fabulous super foods we are so lucky to have access to
